Drink #13: ‘vermillion velvet’ | Beloved

The thirteenth drink of my thirty day book as a bev series is a red velvet oat Dalgona whipped coffee inspired by my paperback copy of Beloved by Toni Morrison. This drink was also giving Valentine’s 🍫 considering I made this around then and am just posting it now, haha.

I love red velvet cake and anything red velvet flavored so this was a fun challenge for me to make a homemade sauce that captures that flavor whilst also suiting the book’s cover.

This beverage’s name is:

‘vermillion velvet’

Name Explained: Pretty simple and straightforward: a red velvet drink, so it’s another way of saying red velvet whilst keeping that alliteration. I like the way vermillion looks better than vermilion, though the latter is the most common way it’s spelt. I think using this name has finally made me begin to associate the word with red and not green, haha.

Golden Whipped Coffee: Did anyone else have a whipped coffee phase during lockdown? I haven’t made one of these since then, but there was a time I was having this every day lol. A simple 1:1:1 ratio of instant coffee, water, and sugar. The more you whisk it the more golden it gets, so I had to keep at it to get it to a hue that resembles the bit of gold on the novel’s cover.

Red Velvet Sauce: The star of the drink. I believe there are some emulsions and sauces out there, but I preferred to try making one. It came together fairly quickly in a saucepan. The key was having a nice balance between the cocoa and vanilla/white chocolate. I also used some condensed creamer.

RATING: Overall I’d give the final drink a 4.70.

Flavor Combination: This was the sweetest beverage I’ve made so far. I usually like to pair my bevs with a sweet treat but this drink was the sweet treat, haha. That being said, the red velvet and oat milk paired together nicely with the coffee.

Ease: The whipped coffee comes together in under a minute; the only thing that took time and effort was the red velvet sauce. If I’d had that on hand, then the whole drink would be done fairly quickly since nothing needs to be brewed or steeped.

Appearance: I’ve been trying to use all natural ingredients for the colors of these and this is the first time I’ve had to use any coloring, and that’s because red velvet as a flavor itself calls for it. I felt like I was cheating, but I was happy with how it came out.

Ways to Improve: This drink was a tad too high on the sweetness scale for me to feel comfortable having it day to day. I think I’d reduce the amount of sugar in the whipped coffee to enjoy it better! The red velvet sauce was pretty perfect to me, but to have a more cake-like flavor profile, I’d like to try adding some element of cream cheese – perhaps in a cold foam.
